PALESTINE —
Easy desserts that are warm and comforting are something to look forward to during the Christmas season. This holiday version of bread and butter pudding reminds me of Christmas in England – sitting around a toasty fire with the family and enjoying dessert with a cup of tea or a warm brandy.
This recipe uses the traditional Italian Christmas bread panettone. It is available at Sam’s Club and FRESH by Brookshire’s in Tyler. It is a sweet bread that is filled with dried citrus and cherries. If you can’t find the panettone you can also use French bread or cinnamon-raisin bread.
Filled with fresh cherries, dark chocolate and sweetened milk you will savor every bite of this English Christmas favorite.
CHOCOLATE CHERRY BREAD PUDDING
9x13 baking dish
5 large eggs
4 cups milk
1/2 cup white sugar
3 cups fresh cherries, pitted and halved
1/2 cup chocolate chips
1 panettone bread, 1 lb 4oz in weight
1/4 cup brown sugar
Crack eggs into a mixing bowl. In a saucepan warm milk with the white sugar. Pour over the eggs and stir to combine. Scatter cherries across the bottom of a 9 x 13 pan. Top with the chocolate chips and then the sliced bread. Pour egg mixture over the bread and let sit for ten minutes to allow the liquid to soak into the bread. Sprinkle with the brown sugar. Bake in a 350 degree oven for 35 minutes.
